Fold the rolled dough into thirds and roll it through again.
Repeat this process, gradually reducing the roller setting until reaching the desired thickness.
Once you have a thin sheet of pasta, switch to the desired pasta cutter attachment on your KitchenAid.
Cut the pasta sheets into your preferred pasta shape.
Bring a large pot of salted water to a boil.
Cook the fresh pasta for 2-3 minutes or until al dente.
Drain the pasta and toss it with your favorite sauce or toppings.
Plate your homemade pasta and garnish with fresh herbs, grated cheese, or a drizzle of olive oil.
