Fresh Pasta Recipe

Equipment

  • 1 Kitchen Aid stand mixer
  • 1 Kitchen Aid pasta roller attachment
  • 1 Stainless steel pot, 8 qt.
  • 1 Pasta strainer or colander

Ingredients
  

  • 1 ¾ cups durum wheat flour
  • 6 each egg yolks
  • 1 each large egg
  • 1 ½ tsp olive oil
  • 1 tbsp milk

Instructions
 

  • In the bowl of your KitchenAid mixer, add the flour and create a well in the center.
  • In a separate bowl, whisk together the egg yolks, whole egg, olive oil, and milk.
  • Pour the egg mixture into the well of the flour.
  • Using the flat beater attachment, mix the ingredients on low speed until a rough dough forms.
  • Replace the flat beater with the dough hook attachment.
  • Knead the dough on medium speed for about 4-5 minutes or until it becomes smooth and elastic.
  • If the dough is too sticky, add a little more flour, a tbsp at a time.
  • Form the dough into a ball and wrap it in plastic wrap.
  • Allow the dough to rest at room temperature for at least 30 minutes. This allows the gluten to relax, making it easier to roll out the pasta.
  • Cut the rested dough into smaller, manageable sections.
  • Attach the pasta roller to your KitchenAid mixer.
  • Roll one section of the dough through the pasta roller on the widest setting.
  • Fold the rolled dough into thirds and roll it through again.
  • Repeat this process, gradually reducing the roller setting until reaching the desired thickness.
  • Once you have a thin sheet of pasta, switch to the desired pasta cutter attachment on your KitchenAid.
  • Cut the pasta sheets into your preferred pasta shape.
  • Bring a large pot of salted water to a boil.
  • Cook the fresh pasta for 2-3 minutes or until al dente.
  • Drain the pasta and toss it with your favorite sauce or toppings.
  • Plate your homemade pasta and garnish with fresh herbs, grated cheese, or a drizzle of olive oil.
