Bacon Gruyere Biscuits Recipe

- 2 slices Bacon, thick sliced
- 1 cup Pastry flour
- 1 tsp Baking powder
- ⅛ tsp Black pepper
- ⅜ cup Gruyere cheese, finely grated
- ¾ cup Heavy cream
- 1 each Egg yolk
Place mixing bowl in the freezer, to keep ingredients as cold as possible during mixing.
Set oven to 375 ℉.
Small dice bacon, add to small cast iron and place on burner with setting on medium heat. Add cold water to the pan, to cover bacon half-way and cook for 15 minutes.
When water has evaporated, turn burner down to setting 3 and brown bacon until crisp, about 15 minutes. Remove from heat and chill.
Meanwhile, in cold mixing bowl, add together dry ingredients: flour, baking powder, black pepper, bacon and gruyere.
Add cold heavy cream and gently mix to bring dough together. Press firmly together into a square "patty" 1 ¼" thick.
Carefully trim edges, and cut into two squares. Flip over making the bottoms tops. Brush them lightly with egg wash and place on the baking sheet.
*OPTIONAL: Place baking sheet with biscuits in the freezer and chill for 20 minutes before baking for more perfect results.
Using the center rack, bake until deeply golden and completely baked in the center, approximately 35 minutes.
